Chicken and Sausage Gumbo



Prepare the chicken

  • Salt

  • Pepper

  • Grape seed oil

  1. Add a little bit of grape seeds oil to a pan.

  2. Add chicken

  3. Salt

  4. Lot of black pepper

  5. Sear for about 8 minutes on each side

  6. Once ready, Add a bit of dark amber beer and smoosh the chicken around to get all the burnt stuff out of the pan and to add some caramelization to the chicken.


 

Gumbo

  • Half cup flower

  • Half cup grape seed oil

  • 1 Chopped white onion

  • 1 Chopped green bell pepper

  • 2 Celery stalks - thinly sliced

  • 6 Garlic cloves - thinly chopped

  • 1 Green hot pepper - thinly chopped

  • 1L Chicken Stock

  • 500g chicken breast

  • 4 - 8 sausages

  • Tyme

  • 4 bay leaves

Roux

  1. Add oil to a pot

  2. Once oil starts steaming - add flower

  3. Stir for about 20 minutes on medium heat until brown. Never leave the pot, keep stirring.

  4. Veggie

Veggies

  1. Add vegetables (not the garlic) and a pinch of salt - this will help the veggies release their flavor.

  2. After a couple of minutes, once the veggies have calmed down we can add our garlic

Liquids

  1. Add beer, cook it until alcohol evaporates

  2. Add chicken broth, make sure you add it slowly and stir while you add it.

Seasoning

  1. Add 4 bay leaves

  2. Add chopped thyme

  3. 1 tbsp salt

  4. Lots of black pepper (30 cracks)

Meat

  1. Add chicken

  2. Chop the sausages, either to thin rings or to big slices and add them


  1. Stir every 10 - 15 minutes, cook for at least 3 hours

  2. Wait and drink

Serve

In a bowl over white rice with chopped green onions
